Almost Sprinkles

The other night I made some red velvet cupcakes with the Sprinkles recipe for cream cheese icing. I think they turned out really well!

I’m not the best at icing cupcakes…ha..ha…

RECIPE

“Sprinkles” Cream Cheese Frosting

8 oz of cream cheese, very soft
4 oz of butter, very soft
1/8 tsp salt
4 cups of powdered sugar, sifted
1 tsp of vanilla extract

Pumpkin Cupcakes

Last night I made pumpkin cupcakes with cream cheese icing. My mother in law gave me a great recipe for pumpkin cake and I have been DYING to use these precious cupcake liners that Summer gave me awhile back…..and it looks so cute right?

And they taste like pumpkin pie…I am sure everyone is ready to get their eat on for next week!
RECIPE

Ingredients
2 c. sugar
4 eggs
1/2 c. oil
2 1/2 c. flour
1 T. cinnamon
1 t. salt
2 t. baking soda
1 16 oz. can of pumpkin
Directions
Mix sugar, eggs, and oil; combine flour and dry ingredients a little at a time. Add pumpkin last. Bake at 350 degrees for 40 minutes in a 9″ 13″ pan….but I obviously did cupcakes.

Sherry’s Gazpacho soup

Sherry is my mother in law and she makes the best gazpacho soup! I never thought I would like a cold vegetable soup, but this is delicious and very healthy….so I thought I would share the recipe with all of you 🙂

Gazpacho Soup

3 c. ripe tomatoes, chopped
1 Tbsp. dried onion flakes
¼ c. soup stock
2 c. cucumbers,* peeled and diced
2 stalks celery, diced
½ green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
3 green onions, sliced
2 Tbsp. extra virgin olive oil
1½ – 2 Tbsp. lemon juice
4 tsp. Bragg Liquid Aminos, or lite soy sauce
1½ tsp. dill weed
1½ tsp. herb seasoning

Place 1½ c. tomatoes, onion flakes, and soup stock in food processor or blender and puree. Place in large bowl. Add remaining vegetables and other ingredients and stir well. Cover and chill. Do not heat – this soup is served cold. Garnish each bowl with a few parsley flakes, if desired.

Baking Skillz

I decided to bake some cupcakes tonight to get in the baking mode!I got a new cupcake pan and some cute liners at Sur La Table this weekend
I make my own chocolate icing (did you think I would decide to make anything BESIDES chocolate? No-I don’t think so!)
2 bags of Ghirardelli semi-sweet chocolate chips
1 stick of butter
(melt butter and chocolate chips together)
1/2 bag of powdered sugar
a little bit of milk
a tbs. of sour cream to make it smooth
beat until smooth….
Here it is all nice and creamy-but still warm. I wanted it a little bit cooler so it
would be easier to work with
So I layed it on top of the icees. This was a MISTAKE!!!! It came out rock hard and I had to warm it up again just to make it work!

I obviously need some major work on icing the cupcakes-but the point is they taste SO good!
It looks like poo on top of them…but I promise it’s chocolate! LOL!
(Maybe I shouldn’t have put that thought in ya’lls head!) Oops!

Cake Balls!!!


Well, I thought I would try to make the cake balls everyone is talking about today while I was off work. Gave me something to do anyways! Here is how it went…

Bakety, bakety, bake..bake..bake…

I just had Terence test one out for me. He said they were pretty good! It was kind of messy though and the red velvet cake dye didn’t help much, whatever it touches turns red! I’m glad I finally tried it out to see what all the fuss is about. I made smiley faces. I wanted to do some sort of fall them, but it didn’t work out that way. I bought the cute little jeweled skewers and it looks like the smiley faces are throwing a party with a kazoo coming out of their mouths.
