Faux Fur For Fall

I’m loving fur vests this fall.  Not real ones of course, because obviously I can’t afford it (but I just tell people I support Peta…wink…wink 😉 )

I’m wearing one today I got a couple years ago and I LOVE IT!  It’s hides my muffin top and it’s super cute!  How do you style your fur vests???  Holler back girls!

Here are some of my favorite styles!  (Yes that’s an eggnog latte, which will happily be my selfie companion throughout December)

Holiday Spinach, Egg, & Cheese Soufflé

This is a sponsored post on behalf of Goldrich Eggs, which can be found at Wal-Mart.  All thoughts and opinions are my own.

The holidays are right around the corner and today I want to share with you one of my ABSOLUTELY favorite recipes for the holidays.  This actual dish was shared with me by my Mother-in-Law years ago when my husband and I first started dating.  I remember visiting them and this soufflé was so good…but I was too embarrassed to get up and get a second helping.

Then everyone else got up and started getting more, so I did too 🙂

So, here it is and I hope you enjoy it as much as I do!

Puffy Cheese Soufflé with Spinach and Ham Filling

(I didn’t use ham in my recipe, but it’s wonderful in the soufflé)

Soufflé:

9 large eggs

1 1⁄2 c. grated cheeses – a combination of mozzarella, provolone, Gruyere and parmesan (3/8 c. each)

Sauce:

1 stick butter

2/3 c. flour

3 c. milk

3⁄4 t. salt

3/8 t. pepper

Filling:

1⁄2 10-oz. pkg. frozen chopped spinach, thawed

1⁄4 c. sliced scallions or green onions

3/8 c. cream

about 1⁄2 lb. sliced lean ham, optional, chopped

Preheat oven to 375 degrees. Spray a 12” x 18” jelly-roll pan with Pam. Line with parchment paper.

Separate yolks and whites, dropping yolks into a bowl and whites into a mixing bowl.

If you don’t have an egg separator it’s probably one of the best investments you can make for your kitchen.  I love tool.  The yolks held together great!  Just look at that beautiful #GoldRichYolk

D7K_5863-2

Make a roux by melting butter in a large saucepan and adding flour, mixing until well blended. Cook mixture for two minutes, stirring constantly. Whisk in milk until mixture is smooth.

D7K_5875-2 D7K_5883-2

Simmer until mixture starts to thicken. When mixture thickens, stir constantly until thick and bubbly. D7K_5885-2

Remove 21⁄2 cups of the sauce into large bowl. Allow to cool for 10 minutes. To this sauce, add cheese, salt and pepper. Beat in the yolks until well-blended.

D7K_5891-2 D7K_5893-2

Beat the whites until stiff. Fold whites into the yolk/sauce/cheese mixture.  I am using Goldrich Eggs,  they have a rich, golden yolk with a distinctive texture and flavor.

D7K_5856-2

It’s very important that you don’t get ANY yolk in your egg whites or they won’t fluff up!

D7K_5888-2

Fold, fold, fold….don’t mix!D7K_5895-2

Pour into prepared pan and bake in 375 degree oven for about 17 minutes or until golden brown and set.

D7K_5896

It should turn out something like this:

D7K_5901-2

While baking, squeeze water from spinach. Blend into reserve sauce; add scallions, 3/8 c. cream, and chopped ham (optional).

D7K_5898-2

Remove soufflé from oven. Invert onto tea towel and peel off waxed paper. (I ran out of was paper and used aluminum foil.  DO NOT DO THIS!!!!  I sprayed my aluminum foil with non-stick cooking spray, but it still stuck like glue)  ALWAYS USED WAX PAPER!!!  Live and learn right???

Spread with the spinach mixture. Roll, starting at long side and end up seam side down.

D7K_5904-2

After you spread your spinach mixture gently roll the soufflé.

D7K_5906-2

Place back in the oven and bake at 350 degrees until a little crisp and heated through.

(about 20 minutes).

Serves 8-10

You should end up with something like this 🙂

I hope you enjoy this recipe as much as I do, it’s seriously one of the best things you’ll ever make!

Weekend Update

How was your weekend? My was CRAY CRAY!!! That’s how this time of year…it’s go, go, go!

Saturday morning we got up early to go to REI in Southlake where they had a brand new store opening.  The first 100 customers got a gift card so we got there an hour early only to find about 200 people already in line.  #FAIL

Connor needs a new coat because he has outgrown the one he had last year.  Kids be expensive yo!  We ended up ordering him one.  Hopefully it will get here soon because I feel like a horrible parent sending him to school in a fleece and all the other kids look like Ralphie’s little brother bundled up in their winter wear.

We had good family time though walking around Southlake Town Square and checking out the Christmas decoration.

Terence is in need of new glasses.  He tried these on, they are WAY out of his comfort zone and much more trendy than he would normally wear.  What do you think ladies???  He needs an opinion:

This isn’t a full resolution photo because I grabbed them off Instagram.

Oh Christmas Cards! Oh Christmas Cards!

One of my favorite things about the Christmas season is getting cards in the mail.  I love to see how people have changed and how all the kids have grown.  I always save the cards in a book and look back through them each year.  I actually look forward to getting mail and opening up the beautiful cards with photos.

One of my favorite places to get Christmas cards is Minted.  If you haven’t heard of Minted head over there ASAP!  They have a ton of card designs, so many it’s hard to choose just one!

I can’t wait to send our cards out this year.  I was looking through Minted and wanted to share with you some of my favorite designs.

The foil cards are my favorite.  The shimmer is so pretty!

Minted also has cards that you can put on the tree as an ornament.

OshKosh B’gosh #GIVEHAPPY This Christmas

I participated in an Influencer Activation on behalf of Influence Central for OshKosh B’gosh. I received an OshKosh B’gosh gift card to purchase product and to thank me for my participation.

I’ve been super busy with Christmas photo sessions this season.  I absolutely LOVE taking photos and it’s such a blessing!  One of the questions I get asked a lot is “How should we dress?” or “What should we wear?”  I usually tell people to mix and match.  You don’t have to be all matchy matchy.  Choose one or two colors that blend together well and after that just dress FUN!

I recently had the opportunity to shop at Oshkosh B’gosh and I chose Connor’s outfit for our family photos this year.  I love Oshkosh B’gosh and I remember my Mom buying my sister and I overalls when we were around Connor’s age.  Oshkosh B’gosh has been around forever, but it’s not just about overalls anymore…they have SO many cute options to choose from.

Here is what I chose for Connor:

D7K_5836oshkosh4Shop this look:

I shopped for all of these items online and everything was easy to find and it was fun to shop all the looks that were put together or create my own.  My items came in less than a week, so if your in a hurry to find something for your little ones to wear this season…fear not!  I also believe Oshkosh B’gosh has FREE SHIPPING right now!

If you would like to shop in store, find your nearest location HERE.

Here are the jammies we got too!  These say “I ate Santa’s cookies”.  So cute!

OshKosh B’gosh is a brand I’ve trusted and worn for years.  The quality cannot be beat.  If you want something that is going to last you until next year, then OshKosh B’gosh is the place.

It’s easy to #GIVEHAPPY, and even the smallest acts of kindness can help brighten someone’s day! We are planning on buying some clothing, socks, and shoes for two children this year.  There are so many kids who won’t be getting anything for Christmas.  Adopt a child in need and show them love & #GIVEHAPPY.  It’s just as much fun to give as it is to receive.

Christmas Coffee Favorites

I had yesterday off and I got up early and dropped Connor off at school ( Oh yes I did…because I’m paying for it anyway!)  Then I came home and started to watch TV and felt so unproductive.  So I decided I’d haul out ALL our Christmas stuff from the attic (after Terence told me to wait until after Thanksgiving), but I thought he would appreciate my effort to get everything done while I was home with no distractions.  BAM!

Got it all done yesterday.  My Christmas décor is up and I am HAPPY!  My back and arms are incredibly sore from hauling boxes from the attic.  Totally worth it though…it’s not so much the Christmas décor I love.  It’s the tree and the lights at night.  I just love the warm glow it gives in the house.

So, yay for a short week and having all my Christmas stuff DONE!  I walked into Starbucks this morning and was overtaken by the new array of gift cards they offer.  The art on these little cards is amazing yuns.  I had to stand there and take them all in…

After I absorbed all the cards then I bought my annual Starbucks cup ornaments this year.  I also tried the new chestnut latte and it’s actually not too bad!!!
