I enjoy trying my best to live a balanced life, with a focus on fitness and health as well as motivating others, working hard, creating new recipes, trying to make familiar recipes healthier, and motivating others to get up and be active! I am hoping to have people join me on my ALWAYS evolving journey to being more fit, finishing ChaLEAN Extreme (CLX) on 8/20/12, and starting P90X on September 1st.
I post recipes, home spa treatments, motivational pictures, recaps of daily life, anything that appeals to me and that I feel others might enjoy or benefit from! I love this new journey I’ve begun with blogging and I’ve met so many great people already! I cannot wait to see what the future holds. Nice to “meet” you! Here’s a quick recipe for those gals on the go like myself!
Eggs are a great source of protein and part of a healthy breakfast and these are easy to take with you wherever you’re going. Egg Muffins (Revisited Again) (Makes 12 muffins, recipe created by Kalyn with inspiration from The South Beach Diet book. 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins. You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike Seasoning (optional, if you have food allergies or don’t have Spike, use any type of seasoning blend that’s good with eggs.) 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F.
Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator without freezing. Egg muffins can be frozen and reheated, but I like them best when they’re just refrigerated.
For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat. This printable recipe from KalynsKitchen.com.

Weekend Update {Fall Ready}

1.  This post title reminds me of Saturday Night Live.
2.  We didn’t do much this weekend but live like bears in a cave.  Connor’s fever finally FINALLY went down and I’m able to be back at work today!  Thank you Jesus!
3.  Having a sick kid at home is so draining.  The whining and crying and just seeing your child sick is awful.  It’s emotionally draining and tiring…cuddly….but tiring. 
4.  I was able to at least go to Target and get some groceries and do some laundry.
5.  We watched Despicable Me at least 5 times….such a cute movie.
6.  I put out some of our fall decor.  I am so ready!  I lit some pumpkin spice candles and I just felt better all of a sudden???  Bath and Body Works has the best candles evah!
7.  HomeGoods just opened up around the corner….this is probably not a good thing for my wallet.

Diagnosis

We finally have a diagnosis for Connor boy:  Strep throat.
 
Ugh.
 
I’m so glad it’s not west nile….I have to admit I’ve kind of been freaking out about that.  It’s all over the news here and listening to that can be scary. 
 
He was feeling better for a few hours yesterday, but then his fever spiked last night.  Terence took him to the pediatrician today and now he’s on antibiotics. 
 
I took some photos yesterday while I was home with him 🙂
 
For the few hours he was feeling good….my sweet boy you are growing up way too fast!

Sickheads

 
Woke up this morning and this dude had a very high fever. 
 
What the heck?
 
Of course the only time I get to be a stay at home mom is when my kid is cranky and whiny and sick!  I just didn’t plan for this today.  Terence started a new job so of course he can’t stay home because he doesn’t have sick leave.  I do enjoy the snuggles though. 
 
We’ve all been dumpy lately.  I’ve had a cough and sinus congestion that just won’t go away.  Terence started hacking up a lung this week too.  (I really can’t stand people who carry spit cups around the house….just saying) It’s been awful.  I’m on my second round of antibiotics and nothing seems to be helping this biz???
 
All we want is to be a normal functioning family again.  Going through 3 boxes of tissues and crazy amounts of cough syrup a week….I’ve had enough. 
 
Please get better soon.  I’m ready to join the land of the living.

Relax & Kick Back

I forgot to blog about Relaxation Day at work last week!  We all got to wear our tropical attire and ordered lunch for the day.  I’m really blessed to have such a great job that I enjoy.  I work with such great people!

I don’t know how relaxing it actually was….but it was fun to dress up and pretend 🙂

Revlon Expression Exeriment Kit

 
I recently had the opportunity to try out the new Revlon Expression Experiment kit.  I love to play with makeup. I feel naked if I leave the house without it.  Experimenting with different colors and types of products is how you find out what works for you.  I was excited to try this kit, I really like the Revlon brand because it represents empowering and engaging women to try new things!
 

In the Revlon Expression Experiment kit there was an explosion of color! I received facial primer, ColorStay eye shadow palettes, Color Stay long wear nail polish, SuperLustrous lipstick, ColorBurst Lip Butter, & ColorBurst gloss.

Love this bold red color for fall!
The Lip Butter was super moisturizing and went on smooth as…well….butter.
This gloss was the perfect balance of moisture and color.
This lightweight primer smoothes skin while evening out skin tone with color correcting pigments that neutralize redness and uneven color. Wear alone to tone skin or under foundation, it helps your makeup last longer.

Wishy Washy Wednesday

Thank you for all your kind words of encouragement on yesterday’s post.  I feel so overwhelmed and loved.  Thank you!  I’m so blessed to know each and every one of you, whether it be in real life or through blogging.  So blessed.
I think we all have our ups and downs….I’m actually feeling better today.  Day #3 on antibiotics and doing alrighty!

It’s a monthly box to door service for your child.  You do have to specify the age range of your child to get appropriate products for them.  I look forward to getting Connor’s box every month and it always has products & coupons we both enjoy!

My hair is finally starting to grow a little bit.  I miss my longer hair!  I’m trying to decide whether or not to say lighter or go darker for fall.  You all know I’ve been every color in the rainbow….what do you think?

I ordered my first May Book yesterday.  I love that it’s cute and has a monthly agenda as well as a weekly schedule.  AND-it’s small enough to take with anywhere!

Here is Birchbox for the month of August:  A Schick razor, beauty fixation makeup remover q-tips, Quick Curls creme (love this for Connor’s hair!), Juicy perfume sample, and an eyeshadow stick! Yay!
